Well, this isn't exactly an "instant" mead recipe and it is a bit of a cheat mead but it is pretty quick in terms of mead which usually takes at least six months or more before it is drinkable. This recipe is ready in two weeks and was submitted by a web visitor (Christina D.) My thanks to her for submitting this recipe. I haven't given it a try yet but probably will. And I also made a video showing me doing this process. It is located at the bottom of this page.

Okay, here is what Christina tells us to do:

What you need:

• 1 liter bottle of cheap white wine
• 1 pound of honey
• 1-2 cloves
• a pinch each of other spices -- cinnamon, nutmeg

Here is what you do:

1. Empty the wine and honey into a pot. Heat gently, stirring frequently, until a thick, disgusting scum forms on the top.
2. Throw away the scum.
3. Pour the liquid into the bottle. It will fit back into the original wine bottle because the scum is equal in volume to the honey.
4. Cap and let sit in a cool dark place for at least two weeks.
5. The longer, the stronger.
