Which Yeast should you use for mead?

Just about any white wine yeast is quite suitable for mead making. I will give you three different exact yeasts depending on the type of mead you want to make.

 

 

 

Lalvin D-47 - This is the workhorse of wine yeasts. It is very hardy and it is very difficult to go wrong with this yeast. It's a perfect beginners yeast. If you are new to mead making I suggest you go with this yeast.

Red Star Premier Blanc Champagne yeast - If you are making a mead that you will add fruits or flavorings to I recommend this yeast. It gives a neutral palette that won't overwhelm the fruit flavor.

Lalvin K1V-1116 - This is an aggressive yeast that takes off quick and builds an alcohol level fast. If you are in a hurry and trying to get your mead done quickly this is the yeast to go with.

Lalvin D-47 yeast packet

If you are not familiar with wine yeasts they are pretty easy to understand. These all come in a small foil packet with about five grams of yeast in them. This would be suitable for a five gallon batch of mead. If you are only making a single gallon batch I recommend you go with about a half packet.

And, you can even use common household bakers yeast! Yup. It's true. I have done it. You use one teaspoon of bakers yeast per gallon of mead.

A Note about activation: Yeast comes in dried form. It is dormant and can be stored for long periods of time. But, before you use it for mead making itneeds to be activated. Each type of yeast comes with instructions right on the packet. It's pretty much a matter of adding the yeast to warm water and waiting. If you are using bakers yeast it doesn't tell you how to activate it! That's ok. Follow my instructions for activation right here: Make Mead Part 1 Brewing the Must
