The name "Calabaza" is actually a generic name referring to any type of winter squash. In english it refers specifically to the West Indian Pumpkin which is a winter squash which grows in the West Indies, tropical America and the Philippines.

I was very surprised by this vegetable. It is very similar to squash -but very mild. It has a nice consistency and a nice sweet flavor to it.

There are multiple ways you can prepare it, even eat it raw. But I cut it up into cubes, boiled it then mashed it.

Of all the various variants in the squash family this one is by far my favorite. It has a wonderful mild and sweet taste to it and while as raw it is very firm it boils up easily and quickly.
